Grease traps/interceptors are important to keep functioning, especially if your run a restaurant or business that requires heavy use of the kitchen. A grease trap collects animal fats and vegetable oils in kitchen wastewater before it flows through your plumbing system and reaches sanitary sewer lines. If grease is allowed to build up to heavily, your lines will become clogged and back-up. It's certainly not good for business, since your kitchen cannot function with clogged lines.

Frequency of service may vary. Ordinances recommend that once your F.O.G. level has reached 25%, your grease trap or grease interceptor needs to be serviced. This is called the 25% rule. Servicing your grease trap/interceptor reduces back-up issues and decreases the risk of your trap/interceptor deteriorating due to the build-up of harmful gases.
